The olives are harvested at the right stage of ripeness and pressed within a few hours using mechanical methods.

Cold pressing at temperatures below 27°C preserves the aroma and nutritional properties, resulting in an oil with a balanced flavour, ideal both for use as a dressing and in cooking.
